How can I set a custom shipping text for flat rate shipping?

From the app dashboard, go to Settings.
In settings, go to Discount Groups. There, you will see Shipping Messages options, where you can edit the messages that you want to show to your customers.
The message will be displayed on the checkout page and in draft order.
